Salad for breakfast?

How often do you think about adding greens to your breakfast?

I don't mind a smoothie now and then, but I'm more partial to crunching my food and taking the time to enjoy it. Salads are a great way to get your greens in, but having them for breakfast might seem a bit daunting.

Green Plate

On the green plate, I have salmon with sauteed vegetables and a habanero cheese sauce over lettuce, tomatoes and cucumbers. It didn't take very long to make as the salmon, and sauteed vegetables were left over from the night before.

With my garden coming in, I've been able to hop outside for some lettuce and a few tomatoes (which is so exciting). I just washed up the veggies, and I was good to go. Super yummy.

Orange Plate

On the orange plate, my son made this for me one Saturday after my morning workout. Super simple as you can see but delicious!

The salad was leftover from the night before; he scrambled the eggs with a bit of cheese and made the rice cakes with a banana and some peanut butter. (I can appreciate this might seem like a lot of food, but I'd just finished a two-hour training session on my bike, and it was about 10:00 am.)

Healthy Habits

If we reflect on our healthy eating, many say we don't get enough fruit and veggies daily. Adding salad into your morning rotation is an excellent way to keep things fresh and different. Still, you're also getting in a solid 1-2 servings of vegetables, which makes a big difference. Also, adding some fibre, which will help keep you fuller longer.
